Good coffee is hard to find. To be sure we have the best coffee, we house roast our two blends daily. Espresso blend is a hotter roast to produce a slightly more mocha/chocolate style.
Our latte roast is cooler producing a more acidic style that goes well with the sweetness of milk.
Our house coffees are 20-gram full shots. This is approximately twice the amount you will receive in many coffee shots: but trust us. Unless you really want a weaker coffee you will enjoy this.
It takes a lot of beer to make good wine. As some of you may know, we are brewers as well as winemakers. We have selected our personal list of the world's greatest beers, including several of our own creations, including Little Creatures Pale.
We must mention the world's greatest Pale Ale... Timothy Taylor's Landlord from the family owned brewery in Keighley, West Yorkshire. ....and La Chouffe, in a 750mL cork stoppered bottle, the fruit bomb artisanal ale from the Ardennes Forest (close to the famous Spa-Fontaincham race track). Recently acquired by Duvel, the medium sized Belgian Ale brewer, let's hope this work of art is preserved and respected by the new owners.
Bread preceded beer, which preceded wine. The spontaneous fermentation of the mash and flour of wild cereal grasses by natural yeast is recorded way back into history. As winemakers and brewers, we spend our lives immersed in yeast.
We make bread because we can. All cakes, pastries and breads are made daily on the premises. Croissants, Danish pastries and Portuguese tarts are based on French butter and our delicious Canales are encased in bees wax. Limited quantities are available for take away.
We don't do deep dish or cheese based pizza. We'll leave that to the fast food chains. To us, it is all about the base. The toppings are just that: toppings. Our favourite is the simplest: Margarita: Imported San Marzano tomatoes and oven dried local Roma's. Sea salt, buffalo mozzarella and fresh basil.
Why would a winery invite other producer's wines into its cellar door? Truth is, we spend a lot of time looking at other people's wines. It keeps us focussed, sets our benchmarks and keeps us learning. With this in mind, we decided to create a guest list of wines, all nominated by our wine making team .

The rules were: We chose the Yarra Valley for our winegrowing business. Therefore we limit our Australian selection to our Yarra Valley peers and icons. Choose (affordable) wines from the old world which have influenced us, motivate us or we just plain love.
Cheese and wine go hand in hand. Supervised by our winemaking team, unripe cheeses are acquired from importers and local artisan cheese makers. At the rear of the cellar door you will find our cheese room. This is a humidified room where we hand wash and rotate rounds until they are mature and ready to cut.
Each day, we select 3 or 4 cheeses that are at peak maturity to put on our cheese selection platters. These cheeses are available for sale to take away as well.
